· Cut fish into steaks and fillets
· Supervise other butchers, meat cutters and fishmongers
· Train meat cutters
· Slice cooked meats
· Prepare special displays of meats, poultry and fish products
· Shape, lace and tie roasts, other meats, poultry and seafood
